Doenjang Biscotti by Yuli


Biscotti made with Doenjang. Doenjang is made from Meju, the fermented soybean. 


  • 1 egg or 60 g of tofu
  • 16 g doenjang
  • 40 g cooking oil
  • 50 g sugar
  • 140 g soft flour
  • 1/8 ts baking powder
  • 1/2 ts baking soda


  1. Wet ingredients first: Combine eggs, doenjang, cooking oil, and sugar and mix with a hand blender for 15 seconds.
  2. Dry ingredients next: Add soft flour, baking powder, baking soda, and black sesame seeds and mix for 20 seconds.
  3. Place the mixed dough in an oven preheated to 160-170°(and bake for 50 minutes.
  4. Cool the baked dough and cut into biscotti shapes.
  5. Bake again at 150-160° for 20 minutes.
